Programming Description
Essential Laboratory Testing of Cider and Perry is an advanced class offered in coordination with the Cider Institute. It can be taken by anyone with an interest in learning more about chemical and microbiological testing of cider and perry. Topics include principles of lab analysis, role of analytical testing in cider production, the range of techniques used in house or by external labs, and evaluating the accuracy of results. The majority of time will be spent in a practical laboratory setting, learning the methods for determining common cider and perry chemical parameters. Students will be evaluated on their ability to complete these methods independently at the end of the class.Learner Outcomes
At the conclusion of the course learners will: Understand the role, importance and underlying principles of laboratory analysis in cider and perry production, be able to identify and understand the mani chemical and microbiological analysis methods used in the cider industry, obtain competence in core laboratory analyses of cider and perry including: specific gravity, pH, TA, Free and Total SO2, and have experience completing a range of analyses including fruit maturity, alcohol, residual sugar, volatile acidity, and microbial analysis
